LAYERED BREAKFAST PARFAIT

Fuel your morning with this healthy layered parfait.

This recipe is one to enjoy as the temperatures start to warm up and you’re craving fresh flavours. This breakfast parfait practically screams spring – vanilla chia pudding layered together with raspberries and tart lime juice, and a refreshing orange smoothie with a hint of zingy ginger.

I’ve also thrown in a hint of sesame seeds for a more unique taste. Normally you would think of sesame seeds in the form of tahini as the key ingredient in hummus; however, you can easily throw them into your next smoothie as an alternative to nuts like almonds or cashews. Sesame seeds are a fantastic source of magnesium, calcium, and zinc, supporting your heart and bone health.

And don’t forget about the heart healthy benefits of chia seeds; they’re are full of fibre and Omega-3 fatty acids, making this layered breakfast parfait the perfect start to a healthy day.

 

Chia Pudding:

2 tbsp chia seeds

6 tbsp almond milk

1 tsp vanilla

1 tsp maple syrup

 

Raspberry Lime Layer:

1 cup fresh (or frozen and thawed) raspberries

Squeeze of fresh lime juice

Optional sweetener: ½ tsp maple syrup

 

Ginger Orange Smoothie:

1 cup cold almond milk, unsweetened

Two fresh oranges, peeled

½ frozen banana (peel and slice a ripe banana, freeze overnight)

1 tbsp sesame seeds

1 tsp fresh ginger, grated

Dash of fresh ground sea salt

 

In a small bowl, add chia seeds and almond milk, and stir to combine. Add vanilla and maple syrup, stirring once more. Let everything sit together in the fridge for around 15-30 minutes, until the mixtures forms a pudding like texture. Make sure to stir after the first few minutes to ensure no lumps form. You can also stir once more while it’s setting.

In a small bowl, mash the raspberries with a fork until smooth. Add in a small squeeze of fresh lime juice. Taste the mixture and add a touch of sweetener if desired, but I like the fresh flavour of the lime combined with the raspberries on its own.

Next, add the almond milk, sesame seeds, grated ginger, and sea salt to the blender. Blend this first so the sesame seeds combine well with the milk. Then peel the oranges, and place the orange pieces and the frozen banana slices in the blender with the milk mixture. Blend all together until smooth.

In a mason jar or tall glass, add in half of the chia pudding, followed by half of the orange sesame smoothie, and half of the raspberry lime layer. Alternate layers until the glass is full – feel free to take the handle of a spoon and mix the layers along the inside of the glass for a gorgeous swirled effect.
