What to cook for a Sunday brunch? With the sunny days arriving, we are all craving a sunday brunch with our friends & family. If you have a garden or a nice terrace it is the perfect opportunity to have some friends over, transform into the perfect housewife and surprise them all with delicious treats.

A brunch means delicious bread, croissants & viennoiseries, various types of eggs, scrambled eggs, Benedicts, etc. Bacon, ham, salmon &  dips like guacamole, crab, tarama or tapenade. Different jams and freshly squeezed juices and smoothies.

I will give you 5 sunday brunch recipe ideas, sweet and salty, that you can add to your usual brunch classics. They are very easy to do and it will definitivly give a  refined twist to your brunch!

-Rasberry & Cramberry Smoothie

-Pralinés Croissants

-Blueberries muffins

-Goat cheese feuilletés with honey & thyme

-Mini filo millefeuille with salmon & philadelphia

Ingredients: 150g Fresh or frozen rasberries, bio cranberry juice, mint, lemon, some almond milk.

Mix Rasberries with some bio cranberry juice ( unless you find fresh cranberries), add some mint, lemon, a little almond milk and serve it very fresh!

Delicious and so simple!

Ingredients: 8 croissants, 100g milk chocolate, 50g marsipan & 50g toasted sliced almonds.

-Melt the chocolate and then add the marsipan and the almonds while it is still warm, mix it well the mixture should be a paste.

-Slice into each croissant lengthways, but don’t go all the way through, we just need a small opening to spread our chocolate, marsipan & almond mixture in it. You can serve it! Enjoy!

A typical Brunch do, easy, quick & delicious!

Ingredients for 12 muffins: 100 g of self-raising flour, 100g groud almonds, 100g caster sugar, 2 eggs, 1tbsp milk, 100g butter, 3 drops of vanilla, essence, 3 small handfuls of blueberries.

Preheat the oven at 180c

-To make the almond paste mix ground almonds, sugar and eggs, until it makes a reasonably thick mix.

-Melt the butter in a separate bowl until its soft and creamy. Then mix it to the almond paste.

-Add the flour. The mixture will become very stiff but don’t worry. Just add the milk and vanilla essence. Add the blueberries and mix carefully.

-Spoon the mixture into cupcakes cases, you can top it with some toasted sliced almonds and put the tray in the center of the hoven. Cook it for 20-25 minutes until it gets golden.

A delicate salty amuse bouche for your brunch.

Ingredients: Filo pastry, philadelfia, Salmon & Aneth.

Preheat the oven at 200c

– The base it the same that we used for the Filo thuna & asperagus millefeuille recipe. Cut small circles in your filo sheets ( help yourself with a small recipient for the shape). You need two circles per millefeuille. Baste your circles with some melted butter. You can use also use olive oil instead for a more detox version. Place your filo pastries into the preheated oven, let them cook for 2 minutes until they are slightly golden then take them out and let them cool off. ( mine in the picture below are a little too cooked, I left it too long in the oven, I was baking the scrambled eggs in the mean time, but was still very good!).

– Spead the Philadelphia cheese on the filo circles, then add a slice of salmon ( with some lemon juice), add an other filo circle and top it with some Philadelphia scoop and a pinch of Aneth.

The men’s favorite.

Ingredients: Puff pastry, Goat cheese, Honey & Thyme.

Preheat the oven at 200c

-Cut circles in the the puff pastry, add a slice of goat cheese, top it with some honey & thyme and put it in the oven for 20 minutes.
